Fresh Apple Cake

Let Soak for one hour 4 cups chopped Apples

2 cups sugar

1 cup oil

After one hour add

2 eggs

3 cups flour

1 cup nuts chopped

1 cup fig (or 1/2 Apricot 1/2 strawberry) preserves

2 teaspoons baking soda

1 teaspoon salt

1 1/2 teaspoon cinnamon

1 cup raisins

1 teaspoon vanilla

Mix Well bake in tube pan at 325 degrees for 

1 hour and 15 min. Not low cal. but sooooo good.

 

 

Spaghetti Sauce

Sauté: 1 med. onion (chopped)

3 cloves garlic (minced)

1 bell pepper (chopped)

Add:

1 (6 lb) Can crushed Tomato (Yes the big one)

2 Tablespoons Parsley

1 Tablespoon Oregano

1 Tablespoon Basil

1 Teaspoon salt

1/2 cup brown sugar

1 Teaspoon sweet marjoram

After 1/2 hour taste add white sugar to taste, slowly.

Simmer a few hours covered, then at least 1/2 an hour with no top to thicken. Freeze leftovers for a quick meal.

I made my Italian mom make this in front of me a few times and wrote down what I saw then fiddled with it.  Love ya Ma. She doesn't use any measuring spoons or cups. :-)
